This is my go to recipe.

Ingredients:

  • 1 cup liquid (milk, almond milk, juice, water - whatever works for you and your little one)
  • 1 small banana, frozen (as my bananas go brown I cut them into pieces and freeze them for smoothies)
  • ½-¾ cup of frozen fruit (my favorite pairings are strawberries and blueberries, pineapple and strawberries, and raspberries and peaches) 
  • ½ cup of spinach (I usually have a bag of frozen spinach in my freezer just for smoothies) 
  • Optional: chia seeds, hemp seeds, ground flax

Instructions:

Blend until smooth. Pour into popsicle molds. Freeze until solid. Enjoy!

 

4. Air Fryer Veggie Chips

For those times when only a crunchy snack will do, veggie chips come to the rescue. Thinly slice sweet potatoes, beets, or kale, toss them with a minimal amount of olive oil and a pinch of salt, and air fry until crispy. These homemade chips offer the satisfaction of a crunchy treat without the additives found in store-bought versions.

Ingredients:

  • Sweet Potato, beets, or kale
  • Olive Oil 
  • Salt

Instructions:

Thinly slice vegetables using a mandolin slicer. Preheat the air fryer to 350 degrees fahrenheit. Drizzle or spray veggies with olive oil and sprinkle with salt. Place slices in a single layer and air fry for about 25 minutes, or until desired crispiness, shaking every 5 minutes.

 

5. Mini Sandwiches with a Twist

Who says sandwiches are only for lunch? Using whole-grain bread, cut out mini sandwiches with cookie cutters and fill them with a mix of mashed avocado, thinly sliced cucumbers, or even almond butter and banana. These bite-sized delights are perfect for snack time and offer a balance of whole grains, healthy fats, and the natural sweetness of fruits.

 

6. Frozen Yogurt Dots
